STEAMED GREEN BEANS ALMONDINE
Whole fresh, steamed green beans tossed with extra virgin olive oil, fresh lime squeeze, almond crumbles, freshly ground sea salt and black pepper. Garnished with an additional drizzle of olive oil and topped with more almond crumbles. A delicious, fresh way to enjoy green beans – year round!
Serves 4-6 as a side dish
1-1/2 lbs. fresh, whole green beans, steamed till tender
2-3 fresh limes, squeezed
extra virgin olive oil, as desired
freshly ground sea salt
freshly ground black pepper
salted almond crumbles – place 2 c. whole, salted almonds in food processor – process till evenly fine, then process a little further till oil just begins to release from crumbles – place in covered jar to use as needed in recipes
Place steamed green beans in large bowl. Add lime juice, as much olive oil, salt and pepper as you like, followed by as many almond crumbles as you like – you be the judge. Toss to evenly coat.
Plate, then sprinkle generously with additional almond crumbles. Drizzle with additional olive oil, and a little more salt and pepper. Serve.
Notes: This is an easy, quick way to enjoy your green beans. Use extra virgin olive oil for an enhanced flavor achievement.
If you prefer to add fresh garlic to the mix, mash the garlic before adding to the beans.
Although designed as a side dish, if all you want are green beans for a light supper, this will do you just fine!
If you don’t have a food processor, place almonds in a paper bag and pound with heavy skillet or the flat side of a hammer head till fine.
For steaming veggies, I use a colander placed in a large pot, then cover it with a large lid when the water boils. It works perfectly. Green beans cook quickly, so keep an eye on them.
