APPLE DATE SPICE COOKIES
with sliced almonds. Drizzled with lemon icing!
Makes 3-1/2 dozen
Preheat oven to 375 degrees
1/2 c. trans fat-free margarine
1/2 c. sugar
1 c. whole dates, finely chopped
1 t. vanilla extract
1 t. baking soda
1/2 t. salt
1/4 c. finely ground flax seed
1/4 c. unfiltered, pure pressed apple juice or apple cider
1 red delicious apple, peeled, cored and cut into 3/8 inch cubes
1/4 c. soy flour
2 c. all-purpose flour
1 c. sliced almonds
1 t. powdered ginger
1/2 t. ground allspice
1/2 t. cinnamon
1 c. powdered sugar
2-1/2 T. fresh squeezed juice of lemon, strained
Combine margarine and sugar in mixing bowl. Stir and mash till creamy.
Add dates, vanilla, baking soda, salt, flax seed, apple cider and apple cubs. Mix well.
Add soy flour, all-purpose flour, almonds, ginger, allspice and cinnamon, mixing after each addition.
Drop by rounded teaspoonfuls on lightly greased baking sheet.
Bake in preheated 375 degree oven, on middle rack, for 15 minutes. Remove to wire rack.
In separate bowl combine powdered sugar and lemon juice. Stir till smooth. Drizzle over tops of all cookies, while cookies are still warm. Cool at room temperature.
Notes: The pure pressed apple juice, or apple cider imparts more apple flavor. The darker the juice the better. The standard light-colored apple juice has very little flavor for baking purposes.
Locate soy flour in the flour section of most mainstream markets and all stores that carry bulk foods. The soy flour and ground flax seed are used for added nutritional value.
Grind your own whole flax seed by using blender, food processor or coffee grinder.
