with garlic, sweet onion and soy sour cream. Velvety smooth delicious!

Makes 1-2/3 cups

1/4 c. extra virgin olive oil

1/4 c. sugar

1/2 c. white vinegar

1 med. banana, peeled and cut into chunks

2 heaping T. fresh peeled, finely chopped ginger

2 heaping T. peeled, finely chopped onion

2 garlic cloves, peeled and finely chopped

1 t. salt

1/2 c. soy sour cream (I used Tofutti brand)

Place olive oil, sugar, vinegar, banana, ginger, onion, garlic and salt in blender container. Blend on medium speed till smooth.

Add soy sour cream and blend again till smooth.

Transfer to covered container and refrigerate till chilled.

Serve over any lettuce based salad.

Notes: Because there’s banana in the dressing, make it the day you’re going to use it.

Pretty color, mild flavors. You won’t taste the banana in this dressing. It is used instead to create a velvety smooth texture.
