Use any type of lettuce, except iceberg/head with this dressing. I often serve mixed greens tossed with rings of sweet onion and fresh grapefruit segments!

Serves 6

1/4 c. plus 1/8 c. extra virgin olive oil

1/8 c. white wine vinegar

1 garlic clove, peeled and chopped

1/4-1/2 t. mild curry powder

salt and pepper to taste

Place olive oil, vinegar, garlic and curry powder in a blender container. Blend on medium speed till creamy. Salt and pepper to taste, then blend again.
