An olive oil, white wine tarragon vinegar and Sherry salad dressing! Drizzle over slices of chilled baked potato (unpeeled), asparagus spears, tomato wedges and ringlets of sweet onion arranged decoratively on individual salad plates. This dressing highlights the potato and asparagus by enhancing their earthy qualities!

Makes enough dressing for 4 individual salad plates

6 tablespoons mild olive oil

3 tablespoon white wine tarragon vinegar

1 tablespoon plus 1 teaspoon Sherry wine

1/8 teaspoon garlic granules

1/4 teaspoon dry mustard

1/4 teaspoon salt

In small mixing bowl combine all ingredients. Stir briskly with fork till thoroughly blended and slightly thickened. Drizzle over the above salad suggestion, or come up with your own! Create!
